Real Biddy

Real Biddy is the real beer. It is almost identical to Red Biddy except that it is cask conditioned. Normal, brewery conditioned, beer has matured fully in taste before it is packaged into kegs and leaves the brewery. Cask conditioned beer is allowed to develop further in the cask or keg, in two ways: - A small amount of live yeast is left in, allowing for some secondary fermentation.
- A small quantity of hops is added directly into the cask. This late hopping gives the beer a much more pronounced hop character.

Generally, cask conditioned beer develops a more complex flavour profile than brewery conditioned beer. We do not even use gas to dispense Real Biddy; it is drawn from the cask using a hand pump and the bar-person's biceps!
